I fell in love with one of the more current popular fun folds that creates a pinwheel tower that can be displayed on a desk or shelf. For these cards I primarily used the Color and Contour bundle with some bright colors from the color family 6" X 6" stacks. I also learned that there is a super pack of Designer Series Paper in the Host area called Pattern Party that has one side as black and white designs and the other side colorful prints.
I followed directions from Kristina Rees another Independent Demonstrator. There is a variation that you might also look up from Dawn Griffith where she made it less bulky.

The other fun fold has been around for a long time, and I used the measurements shared by Lisa Cursio, Independent Demonstrator. Again, I used the Color and Contour bundle with black and white DSP and a pop of color.
